For over a hundred years, the Michelin Guide has celebrated the world’s finest restaurants. Thanks to its famous stars, awarded by anonymous inspectors, it shines the spotlight on exceptional establishments. Its arrival in Quebec opens the door to a new way of discovering our terroir: a gourmet invitation to explore the talent, creativity and passion that drive our culinary scene.
The inspectors are anonymous and are paid by the Michelin Guide to lend credibility to their approach and promote independent selection. The decor and style of the restaurant are not taken into account, nor is the service received. It’s important to know that the award (star or other) is given to the restaurant, not the chef.
Freshness, seasonality and origin of ingredients are all taken into account.
Mastery of cooking, cutting and preparation is essential.
Balance in each dish and in the menu as a whole is considered.
The restaurant must express its own identity and vision through the dishes it offers.
Consistency must be maintained between visits and on the menu.
1900: CREATION OF THE RED GUIDE
Michelin tire manufacturers created a guide to make life easier for drivers and to get people traveling (and buying more tires!). Free when it was launched, it became a paying publication in 1920.
1926 AND 1931
The first “bonne table” star is born. In 1931, the 2nd and 3rd stars appeared.
1933
The job of inspector is created! The anonymity and independence of the inspectors lend credibility to their selection of good addresses.
2022
Canada enters the Michelin Guide with its very first cities: Toronto and Vancouver.
2024
The Alliance de l’industrie touristique du Québec and its partners sign an historic agreement with the Michelin Guide team. Quebec is the first province to welcome the Guide throughout its territory. The first Quebec selections are published in 2025.
