A true treasure of Quebec’s terroir, ice cider is a direct result of the province’s harsh weather conditions. Here’s the story of this beverage, which “sweetly” embodies the spirit of Canadian winter. ❄️🍎

A French recipe…all from Quebec!

It was in the Dunham region that the first ice cider recipe was developed. Made from Estrie apples, it was invented by a self-taught winegrower and cider-maker of French origin: Christian Barthomeuf. Inspired by ice wine production techniques, in the early 90s he devised an innovative method for using apples naturally frozen by the cold. This technique concentrates the sugars in the juice, giving rise to a rich, intensely sweet nectar. 🥂🍬

The process soon inspired François Pouliot, a former film producer and new landowner in Hemmingford, Montérégie. With the help of Christian Barthomeuf, he took advantage of the orchard surrounding his estate to launch the very first ice cider in 1998, bearing the label La Face cachée de la pomme.

This distinctive product quickly established itself as an emblem of the region, combining traditional craftsmanship with the natural richness of the winter climate. Today, ice cider is protected by a Protected Geographical Indication (PGI), reinforcing its prestige and quality on the international stage. 🌎 😎

My product is winter!

Producing ice cider is a demanding and delicate process, requiring not only quality apples, but also rigorous cold to obtain this sweet concentrate. 🥶 There’s no question of artificially freezing apples for production: Quebec cider must necessarily concentrate the fruit’s natural sugars through natural cold. Harvested at temperatures below -8°C, the apples are pressed, and the juice obtained is fermented like traditional cider. However, the apples’ natural sugar is much more concentrated, giving the final product an unrivalled aromatic richness. Ice cider is then aged, much like a wine, to reveal its full complexity.

This long and painstaking process is not without its challenges. Producers must ensure that the apples don’t spoil, and that the temperature remains low enough to maintain the quality of the fruit. Every step, from pressing to fermentation, is crucial to achieving the velvety texture and unique sweetness that characterize ice cider. Patience and attention to detail are essential, as the slightest deviation in temperature can affect the quality of the final product. The whole process guarantees a cider with deep flavors, capable of rivaling the finest wines. 💪

International renown

In less than 40 years, this beverage has conquered connoisseurs the world over and become a staple on Quebec tables, particularly during winter festivities. The drink’s reputation continues to grow. Today, ice cider is produced in many parts of the world, including Europe and the United States, but Quebec remains the benchmark.

Quebec cider makers such as Domaine Pinnacle and Cidrerie Michel Jodoin continue to produce some of the world’s finest bottles. Their success is evident not only in festivals and drinks competitions, but also in the growing enthusiasm of cider lovers around the world.

The many facets of ice cider

Much more than an aperitif drink, ice cider is also a precious ingredient used in refined culinary creations, whether desserts, sauces or sweet-and-sour dishes. Its unique taste, combining sweetness and acidity, goes perfectly with fine cheeses, meats and even chocolate. It has also become a prized ingredient for winter cocktails, adding a sophisticated touch to the boldest creations. 🍸🍹

Ice cider producers have diversified their offer, creating more complex varieties, sometimes aged in oak barrels to add woody notes, or combined with spicy aromas such as cinnamon or vanilla. These new versions are particularly popular during the festive season, when ice cider becomes a must-have on Christmas tables. 🍽️ 🎅

The future of ice cider

More and more producers are exploring new varieties of fruit and ingredients, such as red apples or even wild apples, to produce more complex ice ciders with more varied flavor notes. Technological advances, combined with the expertise of producers, are paving the way for an evolution of the product, while respecting the traditions that saw its birth!
